This is one of my favorite spring recipes!
It is great for lunch or dinner or both if your are like me and don't mind eating something delicious twice a day!
You will need a bunch of asparagus, one stalk of rhubarb and as many shiitake as you like ....
Slice the asparagus stalks in 1/4 inches thickness, keeping the flowering end on the side.
Slice the rhubarb the same way and slice your mushrooms.
warm up some olive oil in a cast iron pan and sautée spices like cumin seeds and mustard seeds or any kind of spices that speaks to you or is recommended for your dosha unbalances.

Add the asparagus, saute for few minutes then add the rhubarb and then the shitake mushrooms. Sprinkle some salt and pepper to your liking. When shitakes are cooked add the asparagus florets for another few minutes.
Voila! Your meal is done! Light a candle for dinner, give thanks for another beautiful day on earth and enjoy!

Note that you can make this with whatever is seasonal. Keep to 3 different vegetables at the most. With summer asparagus are ending but green are still in like radicchios...or sugar snaps etc.....

Also, feel free to add cilantro (great for pitta) or parsley.....

This is a great recipe for a treat, a craving for sweet....excellent for the vata and pitta dosha... and for building strength after giving birth and breast feeding. In one word, nourishing!

1/3 cup blanched almonds

1/3 cup walnuts or hazel nuts

1/3 cup of pumpkin or sunflower seeds

10 pitted ( medjoo)l dates

1/4 tsp cardamom

1/4 tsp cinnamon

A pinch or more off ginger, clove and/or nutmeg.

Few drops of rose water or orange oil

Put all the ingredients in a food processor.

Pulse until mixture forms a thick paste.

Refrigerate for an hour and form into bite size balls.

Cover with shredded coconut if desired...

Enjoy!

P.S Kapha dosha may have this in great moderation...:(

Ayurvedic insight on compatible foods

6/1/2015

Ayurvedic recommendations on food combinations.
This is a recommendation based on foods that don't mix well and are difficult to digest when mixed.
Some constitution will be able to digest better than other. Occasionally it might be okay to do a "wrong" mix but on a regular basis it will create "ama" or metabolic toxins as a result of undigested foods. Observe your tongue in the morning and if you have a thick coating it is a sign of ama.

Don't eat:

  • Beans with fruits, cheese, eggs, fish, milk, meat, yogurt.
  • Eggs with MILK, fruits, especially melons, beans, cheese, kitchari, meat, yogurt.
  • Grains with tapioca, fruits.
  • Fruits with any other foods.
  • Honey, boiled or cooked or with equal amounts of ghee.
  • Lemon with cucumbers, milk, tomatoes, yogurt, melons.
  • Melons with anything.
  • Milk with BANANAS, cherries, sour fruits, yeast breads, fish, kitchari, meat, yogurt.
  • Nightshades with MELONS, cucumbers, dairy products.
  • Radishes with bananas, raisins, milk.
  • Yogurt with fruits, cheese, eggs, fish, milk, meat, MILK, nightshades.
