Subjis are one of my favorite quick meal for any day!
I love Ayurvedic Cooking by Usha Lad and Dr. Vasant Lad Heat oil or ghee in a medium enamel or cast iron pan. Add cumin seeds, mustard seeds and hing. When the seeds pop add the turmeric, masala powder. Add the green beans, tomatoes and squash. Stir for few minutes, then add some ginger, salt and pepper and a little of water. Cover and simmer for 5-10 minutes at medium heat...till beans are tender. This is a variation of the recipe in the book....Play with the spices...make it yours....Enjoy!
