Often time I am asked during consultation how much one should eat for optimal health?
In Ayurveda the answer is simple: 2 Anjali 1 Anjali is the size of one's own hand cupped. We all have different body size and constitution. The size of our 2 own hands cupped together is just the right amount. Ayurveda also recommends to leave our stomac 1/3 empty to promote good digestion! How do I feel 2/3 full? For me, it is the point that I reach when I could eat a little more but I am actually satisfied if I stop right there. The body of one who uses oil massage regularly does not become affected much, even if subjected to accidental injuries or strenuous work. By using oil massage daily, a person is endowed with pleasant touch, trimmed body parts, and becomes strong, charming and least affected by old age. I love it all year long even in the summer! It is easy to make and you can twick it to your liking and your dosha. Basic recipe: 1 anis flower 3 cloves 4 cardamom pods crushed 1 Tblsp of fennel seeds 4 slices of ginger root 2-3 cups of water boiling ... Add the spices Let simmer for 5-10 minutes Add some black tea.. A good pinch...I like earl grey or Assam tea. Let summer few more minutes....depending how strong you want it. You can vary the thickness of the shake by adjusting the amount of hot water you add. You can customize the quantity and density of the shake by changing the amount of dates or almonds you start with and adjusting other amounts accordingly. December 21rst is when the light from the sun will slowly come back in the northern hemisphere. The shortening of the nights will give way to the lengthening of the days. It is a time to celebrate the moving away of the darkness and welcoming the light. This is happening outside of ourselves but also inside as we are a mere reflection of our environment. Spending time with loved ones, feasting, singing and dancing! Spending time with oneself reflecting on the darkness and lightness of our being. Feasting as well on these soul's goodies. In Tibetan Buddhism there’s a set of teachings for cultivating compassion called mind training, orlojong. One of the lojong teachings is, “Whichever of the two occurs, be patient.” This means if a painful situation occurs, be patient, and if a pleasant situation occurs, be patient. This is an interesting point. Usually, we jump all the time; whether it’s pain or pleasure, we want resolution. So if we’re happy and something is great, we could also be patient then, and not fill up the space, going a million miles an hour—impulse shopping, impulse talking, impulse acting out. “Fool” proof recipe Place 1 or 2 pound butter in a Dutch oven and cook, uncovered, on lower- middle rack at 250° oven for 2-3 hrs, or until all water evaporates and solids are golden brown. Let cool slightly and strain ghee through a fine mesh sieve lined with cheesecloth. Pour into a clean jar, let cool completely and seal. Ghee can be kept sealed, in a cool place for 3 month or refrigerated for up to one year. This is a recipe from Cook’s illustrated. In Ayurveda the health benefits of ghee are many…..ghee is clarified butter with the water totally evaporated. High smoking temperature around 400°F. In winter it is dry so we need unctuous food…fat….to keep us warm and from drying. Ghee nourishes us in the deep tissues….bones, brain….According to the ayurvedic ancient text, ghee is good for inflammation, memory, digestion ….. We just need fat but of course in moderation. Vata constitution or aggravation need it the most, no moderation for them! Pitta in moderation because pita naturally has oil. Kapha is the most unctuous so in greater moderation. If ghee is consumed at a level of 10% or less of total calories and the other fats consumed are plant based ghee is beneficial. In average 1-2 Tblsp/day. :) Enjoy! For vata and Pitta cayenne can be omitted or in moderation.
